The art of living off capital?

Let's pretend for a moment that there is no credit crunch, no banking crisis, everything is absolutely normal. I'm sure it will be good for us!
Say you had £50k or £60k in cash, but you were going to have to live off it for a bit: 2 or 3 years, starting a year from now. You've worked out you can survive on, say, £12k a year. You're in your mid-fifties, and you'd rather be saving all your capital towards retirement, but you don't have that option. What do you do with the money, to come out the other end with as much left as possible?
(In case you're curious, the scenario is full-time education, the fees are taken into account above, and some part-time income is possible, but I'd rather not take it for granted. It's postgraduate, with no long vac.)
