    its not like that bright yellow stuff you see behind the bar.
    have it alongside a curry, or use it to do moroccan dishes some of which call for preserved lemons.
    Or just eat chunks of it when you need something to nibble on!;D
    They are just SO nice, and the longer you keep them the better they get. They go a brownish colour but this is not 'gone off' its a natural process, and i dont think any nasties could survive the salt/pepper.lemon juice combo. its sposed to be an aid to digestion. Have given them as gifts in the past, very well received. You can always start it off on one big jar, then split it into smaller jars once it's 'done'.

    OK, got lemons as Sainsburys had them reduced, can I start them off in a palstic container until I can round up some glass ones?

    yes as long as it seals pretty well and you can sterilise it
    it needs to seal well because of the daily shaking! ;D

    Ssaver I fancy ding the lemons could you tell me how to sterilise the jar please, don't want to crack it with boiling water ;D

    Sorry, yet another dim question...........Do you need to cover the fruit with the lemon juice or just coat it when you do your daily shake? (Having visions of some kind of of kitchen-MSE dance routine developing here!)

    there will be enough juice coming out of the lemons plus the few extra spoonfuls to coat them, sort of wash over them but they will not be totally immersed in juice. You can sterilise jars in the dishwasher or with Milton sterilising fluid.If you make this for someone as a gift i would tell them save it a few months

    I went out with a friend on Friday night, and so many people said to me 'what do you do'? One person actually said, 'so, you are a teacher, physician, cook, artist, scientist'... made my day ;D
    yesterday made bread, chips and sausage casserole, so it was a quiet day;D
