Easy home made high fibre meals?

Hi
I'm hoping you guys can come through for me with some really simple high fibre, high carb, low fat meals?
Hubby has just started training for his first London marathon & needs to change his diet to accomodate the training. I am still struggling to combine being old style with a 4 month old so they really need to be quick simple meals, oh yes and they need to be on a budget:rolleyes: Not asking a lot am I:p?! I can only think of wholeweat pasta bakes & substituting brown rice where I would usually use white. And jacket spuds with baked beans;)
Hubby won't eat tomatoes for love or money & can't have too much citrus fruit or spicy food due to a medical condition:rolleyes:.
Please can you inspire me:D

Lentils are high in fibre, I think. I have made an orange lentil, carrot and coriander soup for our tea tonight. I did put passata in it, but the tomatoes are heavily disguised once they're part of a liquidised soup, so your OH probably wouldn't notice. I made up the recipe as I went along, but I could give you an idea of it if you like.

Hi Lillibet, if you have a slow cooker throw in a tin of mixed beans (Morrisons do a nice own brand one), and I normally put in a tin of tomatoes to ensure there's enough liquid but you could maybe try making up some stock instead, for hubby then add 4 quorn sausages, still frozen. I make this all the time and its so easy and yummy, we don't taste the tomatoes too much even with the tin of chopped toms but you could give it a try.Yesterday is today's memories, tomorrow is today's dreams0

I went to the doctor and found out I have high cholesterol. One of the best ways to lower it is by eating a high fibre diet. Breakfast is always easy but I'm looking to start trying to find more adventurous ways to incorporate fibre into my meals.
Does anyone have a simple bean salad recipe?
Perhaps you have other ideas you can give me for increasing fibre, other than porridge! Although, I have to say I've really taken to adding oats to things. At the moment I'm eating muesli, wholemeal bread, lots of portions of fruit and veg and baked beans. Pulses are something I've nearly tried and I think I'd really like them if I just knew what to do with them.0 -

A good high fibre dish I make quite often, also good for a vegetarian alternative as non vegetarians can eat it as a side dish.
Peel and cut a butternut into 1 inch cubes, parcook by boiling, steaming or microwaving.
when just cooked but not too soft mix in a tin of drained red kidney beans (or ones you've soaked and cooked yourself) a tin of chopped tomatoes and some sort of chilli. (powder, sauce or fresh very finely chopped) pour into an ovenproof dish and sprinkle some grated cheese and breadcrumbs on top. Bake till the top is browned and crunchy.
PS can also be made with pumpkin or sweet potato and you can use a tine of beans in chilli sauce if you prefer.

Sausage and bean casserole made with plenty of beans.
Add other veg to it and eat it with brown rice.
I like spicy food so I always put some reggae reggae sauce in to it as well.:D
