freezing fresh garlic

  • I also freeze garlic. I have two ways of doing this (depending on time available). I just freeze the whole garlic and peel it as I need it. It peels much easily when frozen. The other way I use it to peel all the garlic and chop it in a blender. I then make small sized balls from it and freeze it on a tray. I then put all the frozen garlic balls into a bag and leave till needed. Sometimes I even add a bit of ginger to the garlic at the chopping stage.

    Hi
Just wondered if anyone freezes garlic cloves, i keep my ginger peeled and frozen ready for grating and just wondered if I could do the same with garlic?
I have a few heads which are starting to sprout and thought I could peel and freeze them ready for cooking?
Any ideas, thanks so much x

I liquidise garlic with olive oil and freeze that in tubs immediately. It is very very useful as it scrapes easily from the container. I also dehydrate sliced garlic, which takes up far less room. I freeze peeled shallots which works well and I imagine whole garlic cloves would also freeze well

I will be harvesting the new crop in a week and they are destined to be dehydrated this year as I have lots of the processed garlic left. It is very rusty so am taking no chances on it storing in a rope this year

We got a bag of garlic bulbs from Chinese supermarket, what we didn't use before they began to sprout went in freezer whole.
They separate no problem and peel easily.

Can I ask how you do that Kittie? Do you just liquidise the whole thing, cover it in oil and freeze it? and can you just use , say a spoonful, and put the rest back in the freezer?
I once bought the catering lazy garlic and it had to be used up quickly once it was opened:( So freezing it would be good!
    Thanks:)
