Sauce for Fish

I have finally persuaded my bf to try a bit of fish. I have sorted how I'm going to cook the fillets of salmon (in the oven with some lemon juice, seasoning and butter), but I'm looking for a sauce to go with it.

I have cream, lemons and rose wine in the fridge. This sounds like the ingredients that I might need, but I don't know how to make it or what kind of quantities I need. Can anyone help?

  • A simple one would be a creamy pea sauce.

    200g frozen peas
    1/2 Pint checken or veg stock
    pinch of sugar
    80ml Cream.

    Add stock, peas and sugar to a sauce pan and boil until peas are tender.
    The blitz in a food prosser until it's creamy.
    Add back into a clean saucepan and add the cream.
    Stir the cream in and it's ready. Add some salt and pepper to taste. A knob of butter can also improve the flavor.

    Cor, that one sounds tasty! Gonna make a note of that one.

    Found a creamy white wine one on the net which I think I will use for tonight and use the pea one for the other two fillets in the freezer.

    It says to use white wine, but I have rose wine open, will this one be okay? Don't really want to open another bottle of wine, I would drink it, but think as I'm 8 and a half months pregnant, maybe I should wait a couple of weeks! :D

  • Rose will be fine. It'll just leave a slightly pink tinge to your sauce.

    How about parsley? Just make a normal white sauce and add parsley to taste.

    Hi orkneystar,

    Unsmoked haddock goes well with almost anything. I've made it in a provencal sauce (tomatoes, wine, peppers, herbs de provence), a simple basil and tomato sauce and even a mushroom sauce (garlic, mushrooms, cream) but my favourite is just a simple herb butter: Fry a clove of garlic in some butter, stir in some fresh herbs (my favourite is tarragon) and cook until they begin to wilt then pour over the haddock just before serving. If you want you can add a dash of lemon juice or white wine.

    I really like tomato & roasted red pepper sauce (over pretty much anything) - cut up a red pepper and onion in to large chunks and bung them in the oven at abut 180C with a drizzle of oil, some S&P and herbs and cook until roasted, pop into a blender or food processor add half a tin of toms, blitz until saucey then heat through...

    I think I will try the tomato and pepper sauce idea.
    DS can try some sauce but I suspect he might not go for it, perhaps he can his with a little grated cheese on.

    I like one made with onion, cornflour, cider and French mustard - pour over the fish and bake. Hope the sauce went well.

    Think you've made it now Orkney, but as a late runner - spinach/watercress with some cream & lashings of black pepper...
