HI
Not sure about part baking the bread but I make it late at night and let it have the second rise overnight in fridge then straight into oven for breakfast. yum. Sometimes when I open the fridge looks like mount versuvios has exploded but all tastes good even the ugly ones!!:)

I wondered about part-baking rolls too so I've had a bit of a google and it seems like it's best to bake the rolls at a cooler temperature for a little bit longer than normal so that they're "set" but still pale:

I'm really getting into making my own bread but I used to buy par-baked bread rolls that were frozen then you popped them in the oven for about 10 mins(?) and you had a nice fresh crispy roll! I want to have a go at making my own - has anyone done this? How long should I bake them for before freezing them? Hopefully someone can help me with this!!;)0
