Quandry over gas and elec

Hi all,
we've just bought a 3bed 1920s terrace and have upgraded from a 1bed shoebox. We really ahve very little idea of expected energy usage, we are a working couple with no children. The house currently has very poor insulation but I do stress currently - we are getting damp proofing people in this week and we will be putting in extra loft insulation. We already have UPVC windows and doors, however the central heating and hot water heating systems are separate (but both gas fired).
So, my question is, who to go with for gas and electricity? We currently have southern electric dual fuel standard tariff which I know is not the cheapest. But I get so confused as to get a normal tariff, or a capped one, and then all the differnet prices. I jsut need someone to tell me which is best!! I have looked at all the comparison sites but it's just over my head.
