Personnally I'd go for plastic, i work for an M&E services company and we use it most of the time.
Aoccdrnig to a rscheearch at an Elingsh uinervtisy, it deosn't mttaer in waht oredr the ltteers in a wrod are, the olny iprmoetnt tihng is taht frist and lsat ltteer is at the rghit pclae. The rset can be a toatl mses and you can sitll raed it wouthit porbelm. Tihs is bcuseae we do not raed ervey lteter by it slef but the wrod as a wlohe.
  • plastic is better and easier to install but copper is cheaper
  • both have there advantages and disadvantages mainly

    copper advantages:

looks neater (if the installer is competent)
    fittings are cheaper

    copper disadvantages:

    pipe is more expensive
takes a lot longer to install
    limescale
    heat loss

    plastic advantages:

    quick and simple to install
    cheaper pipe
    less heat loss
you can often use 1 length with no joints meaning less leaks

    plastic disadvantages:

    fittings our ugly
looks ugly if you can see it and people have a tendency not to clip it properly
    fittings our expensive

these are just a few things i could think off the top of my head, i tend to use copper as i prefer the more professional look and just trust it more

once coppers soldered its sealed i have known a few plastic fittings that have blown off

mainly down to cost i would use plastic underfloor but anything on show would be copper
