Lots of people make in bulk and freeze portions, but does anyone can their food as it lasts longer and doesn't rely on a freezer?
What are the practicalities? Is it more trouble than it's worth?

I do - my surplus tomatoes from the garden (after I've made all the ketchup and chutney I need) are turned into roast tomato puree, which I then 'can' using my pressure cooker. Of course I could freeze the puree, but the freezer is usually very full by the end of the summer, so this is a good solution. Also the puree is used during the rest of the year instead of tinned tomatoes or pasta sauce, so it is nice if it is already liquid and I don't have to defrost it first."Remember that many of the things you have now you could once only dream of" - Epicurus0 -

Thanks for the replies. I was thinking about canning some portions of stew, but it looks more trouble than it's worth with the equipment I'd need to get and making sure it was all done right.0

I'm hoping to start bottling this year, as we don't have much freezer space. I've bought the Complete Guide to Home Canning and Preserving by the US Dept Agriculture which is rather scary but I'm now researching how people used to do it in the war over here. Another good one is Food from Your Garden, which is a Readers Digest book.
Apparently, pressure canners from the US are difficult to get hold of so I'm going to use a pressure cooker.

I've never tried it - the risks of botulism are too great for me :eek: I'll add this to the existing thread to keep ideas together.

My nan used to have jars of home-grown skinned tomatoes that were essentially the same as tinned tomatoes
Anyway, I've been thinking as I have a glut of peppers, tomatoes and courgettes and was thinking of whipping up some ratatouille. However, as I'm desperately trying to clear and defrost my freezer I don't want to freeze any of it. Though sooo difficult as I love this thread!
therefore I was wondering if I could jar any of it up and use like a tin in the near future?

I have done something similar to this in the past, it lasted perfectly well for a year.
At the moment I have 30 jars of the HM baked beans, the recipe came from here and took a day to make, did that about 4 months ago. Opened one yesterday to add to mince for chilli everything was fine.

Canning is great, but you need the equipment and time. Canning jars here are about £2 each if you buy them in Lakeland. The Bertolli pasta jars are the same, so worth buying when they are on offer and retaining the jars. The new lids can be gotten from Lakeland.
We did loads in the States and canned about everything. It takes time, so a big canning session is needed. But fruits and pulses are great.
What is annoying is that canning jars can be gotten from most charity shops in the USA about 5p each.
Worth doing, but set up well and you will enjoy the food for some time to comeNO to pasty tax We won!!!! Just shows that people power works! Don't be apathetic to your cause!0
