Sorting (scanned) document files?

Hi folks

I'm currently sorting through hundreds of scanned (.jpg) documents on the PC and need them sorted by date, subject and if possible their content. There are more to be scanned in too.

Is there any recommended way to do that, because vista's tagging system doesn't always bring up the correct search results?

What would be nice is an OCR program which would recognise the scanned documents and add their content to the searchable file tag, if such a program exists.

If anyone has ideas they'd be welcome, even if it's just a hint on how to sort them within folders, because at the moment although I've made a start on tagging each individual file, it's not working too well with the search. Thanks :)
