When it comes to cloning do only partitions matter?

Ok, I have a dual booting(winxp and win2k) system with 2 ide drives(seagates) and have installed a copy of maxtor's maxblast. One drive has winxp files while the other has win2k.
Recently I bought an external case caddy(sata) and intend to clone the drives.
What I need to know is:-
1.Can I clone each ide drive onto a sata drive so that I can recreate my original configuration but with two different drives?
2. Will I be able to clone both drives onto one sata drive and still be able to dual boot because only the logical partitions matter rather than their physical location?

I have read though the manual but am not sure which part describes what I am after. I am assuming this is a standard method of backing up so that maxblast must be capable of it.
