Coping with tomato & apple autumn gluts
How do other keen fruit & veggie growers cope with their autumn gluts? I have loads of ripening tomatoes and a friend has just given us an enormous bag of apples. The freezers (both of them) are full and I still have a cupboard full of chutney from previous years' gluts (!!) so I'm open to suggestions for ways of drying them if they can be stored for a reasonable time.

why not try a roasted tomato pasta sauce?
Cut toms into halves (or smaller pieces if very large) place in roasting tin - sprinkle with olive oil - add any herbs/flavourings (fresh or dried you fancy/have available).
Roast in a slow/med oven till softened -beginning to brown.
then remove from pan into a pot- I then chuck a drop (?) of red wine to gather up the tomatoey juices from the tin - add that to the pot & stir about a bit - great with pasta + a bit of grated parmesan.
And if you really have a glut it freezes really well - lovely in December/January - really tastes of summer!!
