    Thanks NickiM for this, I have been having a rubbish time lately and that pimp that snack site made me howl with laughter, however, I am seriously considering having a go at the weekend. My OH absolutely loves jaffa cakes and if I can make them at home I will be a cooking goddess :rotfl:

    Ever since I saw the start of this thread, I've been drooling at the thought!

    So, tonight I've made a kinda traybake one, a victoria sponge base, apricot jam with G&B dark chocolate mixed with a little sunflower oil .... it's now setting ... and I can't wait!!!

    DH did ask me if we were then going to make another and put it on pimpthatsnack .. we just love that site!!!

  • You could use a variation on a recipe from the book, Vegan Cupcakes Take Over the World. It has an 'orange pudding cupcakes' recipe which is yummy. You could use a standard plain muffin/fairy cake mix, and then add the below pudding recipe after they're baked. In the original recipe you just poke a hole in the top of each cake, then use a piping bag (I just used a teaspoon) to fill the hole with the orange pudding. Finally, spread chocolate on top - melted plain or a chocolate ganache and stick them in the fridge to set.

    Orange Pudding Filling
    180 ml (3/4 cup) soy milk
    125 ml (1/2 cup) fresh orange juice
    2.5 tbsp (3 US tbsp) cornflour
    1 tsp vanilla extract
    1/8 tsp turmeric for colouring
    1 tsp finely grated zest from the freshly squeezed orange

    Whisk everything but the zest together in a saucepan and heat until it starts to boil. Turn down and stir until it thickens, in the usual cornflour way. (Adjust the amount of cornflour if needed.) Take off the heat when thick, and stir in the zest. Leave to cool then refrigerate for an hour to thicken up, and add to the cakes as described above. A lot of fuss I know, but totally worth it in my opinion!*

    *Basically, I tend to just eat all the orange 'pudding' before it gets anywhere near any cakes. :o)

    I am sure that I read a thread on here a while ago where someone made a giant jaffa cake, and they used a fatless sponge for the bottom, an orange sugar free jelly, or ordinary orange jelly made on a plate slightly smaller than the sponge and then covered with chocolate.
