jaffa cake muffins recipe?? anyone??

hi does anyone know how t make them r would have any ideas about de filling? i know the top is just dark chocolate and the sponge is possibly victorian but its de filling is it just jam or what:mad:
anyways i would love any ideas

  • Hi,i make jaffa cakes in a tray bake style and the filling i do is

    3 tbls spoon of apricot jam and the rind of one orange

    heat gently in a pan to blend together.
    Not Buying it 2015!

  • I do mine as a tray bake as well, but top it with cheapy marmalade with some orange juice. Warm it through first until the marmalade has combined with the juice and thickens up a little.
    For the chocolate topping I add a couple of tablespoons of sunflower oil to the melted chcolate. This makes it a little easier to cut without cracking.
    I know what you mean about all the recipes, you gotta love home baking:j

    thanks a mill goin to try out both ideas c which de oh likes better and thanks a million about de tip wit oil and choco:beer: :beer:
    will i just use cooking chocolate or should i melt down cheap dark chocolate??

  • There's a recipe for jam doughnut muffins in Nigella's 'How to be a domestic goddess' that I've adaped to make a jaffa cake muffin. For the filling I used marmalade, and then I topped them with some dark chocolate - I obviously wouldn't need to cut them up so it didn't matter what chocolate I used. They were lovely and very popular!

    The recipe i use is


    3 oz butter
    3 oz sr flour
    3 oz caster sugar
    2 eggs

    Cream butter and sugar together mix in flour and eggs

    spread into a swiss roll tin and cook for 20mins


    filling

    3tblsp apricot jam and the rind of one orange heat gently to blend

    spread on the cooked base then cover with dark cooking chocolate.

    cut into fingers.
    Not Buying it 2015!
