Is it possible to change a 2 page pdf document to just show the first page or are pdf docs totally edit proof?

It depends on:
1) whether the person who saved it last put security on it
and
2) if not, whether you have software that can edit PDFs e.g. Acrobat (not Acrobat Reader)

I have recently got acrobat reader 8, and while working with it yesterday, found some functions i'd not seen before.
i managed to create a new PDF, from an old one, and just took out the pages i didn't want.
Another way, is to print the PDF to Adobe, and only select the pages you want.
Or you can export the PDF to a word file and edit in there, then create a PDF from Word ( i use 2007 - not sure if other versions do it ).
There are also online PDF editors, but they can take time uploading the files if they are big.

get a free pdf printer off the web. Open the pdf using Afobe viewer and then file print, select the pdf printer and then select the page you want to print.
