I've just won a MASSIVE box of veg...help!

I just won a huge box of veg in the raffle at our local pub and there's 2 gorgeous looking squashes and a marrow in there that i have no idea what to do with, someone at the pub suggested a savoury mince baked into the marrow but i still have no clue what to do with the squashes.
There was loads in there including sweetcorn, carrots, parsnips, runners bean, other beans, tomatoes, cherry tomoatoes, potatoes, onions, and cooking apples...all look lovely so any other idea's for things i can cook up with these and freeze would also be useful...
Can anyone help? Especially with the squashes as I have no idea at all!

    congratulations!

    roast squash is lovely! cut it into chunks, take the seeds out (and stringy bits if they have them) and i generally peel the bigger squash. put in a roasting tin with a splash of oil and cook as roast potatoes! you can also roast carrots and parsnips!

    or squash soup! (a variation on pumpkin soup!)

    in a large pan saute some onion, add diced peeled squash and i use an equal amount of potato. add some veg stock and bring to the boil. simmer until veg soft. i drain the liquid out (keeping it to one side) and mash the veg, adding enough of the reserved liquid to make the consistency soup i like. season with salt and pepper. yum. freezes well.

    could also add carrots/parsnips/sweetcorn to soup.

    ummm what else? cook the potatoes and freeze ready to then roast, or cook some wedges and then freeze them. stew the apples and freeze in protions to make into crumble/pie or just to have on its own.

    i would freeze cherry tomatoes as they are, to use in pasta sauces with a touch of garlic and basil.

    can't think of anything else!

    Sweetcorn is lovely microwaved.

    Peel back the outer leaves but don't tear them off. Remove the 'silk' strands and discard. Put back the leaves and microwave the whole cob for 3 minutes. Pull the leaves right back and use them as a sort of a handle if you want to cut the corn off the cob or let the cob cool a little before nibbling off the corn. It will be really sweet and delicious.
    If you want to freeze the corn then proceed as above but only microwave for 1.5 minutes. cut the corn off and cool before open freezing on a tray and then transfering to a box or bag. You can cook the corn from frozen as you would frozen peas.

    I second the squash soup - cumin makes a good addition and it's even better after it's been frozen.

    potato, parsnip & apple mash is nice.

    I boil up equal amounts potatoes & parsnips, mash together with butter & 1 small cooker that I've blasted in microwave. I sometimes add a small chopped onion and/ or chopped sage. Can serve it as it is or stick in the oven, if it's on, to crisp a bit. It's lovely with pork.

    thanks for all the suggestions, I'll be trying a few of those tonight and hopefully popping some goodies in the freezer from my experiments!
    Chris25,how much apple do you put in compared to the potato and parsnips?

    Oh i forgot to say i also had some beetroot and some swede in there too... i lve roasted beetroot but can't bear it when it's boiled, has anyone got any idea's what else i could do with it?

    sorry - forgot to mention - 1 small apple to enough potato/parsnip mix to feed 3/4 people. Does that make sense? :)

    and you can freeze it too - on thawing, just give a stir. A little water might come out but that can be drained off.


    ***another way I use them is to use the parsnip/potato mash without the apple, mix in an egg and then shape into patties. Coat with flour and/or breadcrumbs and either shallow fry or bake in oven till brown***

    squash in curry is absolutely gorgeous. Great for freezing too. why not take some of your ingrediants and do a big veggie curry to freeze??
