Were off to the Maldives in September with a stopover in Dubai.

It appears to be primarily the Middle Eastern countries that have or perhaps had a problem with Israeli stamps in passports and having had a quick look on the net, the information appears a little confused, however the countries that may or may not have issues with an Israeli stamp appear to include but may not be limited to, Syria, Saudi Arabia, UAE, Sudan, Iran, Iraq, Algeria, Lebanon, Libya, and the Yemen..... If you plan on entering the UAE, I'd be inclined to make a phone call to the UAE Embassy in the UK.
