What about a spatch cooked chicken. Cooked in it's own juices in a roasting bag with loads of garlic and butter and herbs.
Another very cheap roast but it does take ages is a brisket joint more of a very slow roast if you can find either brown onion soup powder or even gravy powder and put that over the top of the joint and wrap the whole joint in foil even the bottom and cook it for a good number of hours all the juice get mixed with the gravy and it's very soft and delish.0 -
bit late now but we had the usual beef and veg i just changed the tatties for rice and peas.0

We have roasted vegetables - sweet potatoes, butternut squash, carrots, onion etc as an accompianent to the roast dinner.0

roasted veg in honey or mapel syrup is lovelllllllllly. Gives it a really nice sweet tang to the meal.
Also what about doing a casserole? They are one of my favs to do. Nice and easy stuff it all in one pot and its done. Also do suet dumplings with it. To nice for words!JeremyMarried 9th May 20090 -
Roast some fresh beetroot in balsamic vinegar and it's amazing....be warned it does turn your pee pink though!0

What about tarting up the gravy a bit, or making a different sauce? That might ring the changes too!
