Any ideas for a roast?

I am about to get started on our weekly roast, however I find I'm getting rather bored of it, anyone willing to share some ideas or/and what they do please?
I dont want to get rid of a weekly roast as the family enjoy it & I use the left overs in other meals. I rotate the meat each week between chicken, pork, beef & occasionally lamb, sometimes cooked plain, othertimes with garlic, lemon or other things to vary the flavour, its the additional veg etc I seem to be bored of. We always have Roast potatoes for OH (myself & the children can't eat potatoes due to food intolerence), peas, sweetcorn, sage & onion stuffing, roast carrots, boiled carrots, roast parsnips, roast onions, sometimes cabbage & yorkshire puds. I dont do broccoli, cauliflower, or swede as they dont get eaten due to dislikes.
Any alternatives?

How about having a roasted veg medley. Put in a deep tray things like chunks of carrot, courgette, butternut squash, red pepper, shallots, cherry tomatoes. Lovely seerved with roasted meat.
Or for more trad feel veg like braised fennel, asparagus, sprouts, leeks.

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!0 -
Oh my, that is such a lot of different veg!
I like roast sweet potatoes (all kinds, not just the orange fleshed ones), roasted pumpkin/butternut/pattypan squash, mange tout, steamed leek, roast leek, baked apple (eaters rather than cookers hold their shape), different cabbages, chinese leaves, pak choi, choi sum, all the other chois (which are grown in this country to supply the Chinese/Asian supermarkets as well as the vastly overpriced western ones), Runner beans, French Beans, Broad Beans, Borlotti beans, marrowfat peas, baby corn, mile long beans, okra, globe artichokes, jerusalem artichokes, savoury scones...[gasp]

How about a nut roast rather than meat? Or a sauce instead of gravy such as pepper sauce with beef or pork.Nevermind the dog, beware of the kids!0
