Can I freeze it?

Bf and I had our housewarming party and bf's mum made very large bowls of coleslaw and potato salad, which was yum. However there was so much left over we stuck it into tupperware and froze it.

It wasn't until today it occured to me that we could keep it frozen until our New Year's Party and have HM stuff then.

However bf isn't sure as:-

a) Will it defrost ok without the sauce going watery or lumpy?
b) Will it taste the same or will the sliced veggies go soggy?
c) More importantly will it last 2 months in the freezer.

I was inclined to leave it in there and defrost on the day to see how it is, but i dont want to risk not having any left in Tesco on NY eve either. I can't defrost a little bit as we've got fairly large portions saved.

Please if anyone has frozen and successfully defrosted HM coleslaw and potato salad I would be grateful to know.

    I would never think of freezing either of these. Maybe best to have a look on similar products in the supermarket and see what the instructions are - I would expect to see Not suitable for freezing but I could be wrong. Then again, you don't see these things in the freezer, or for that matter mayonnaise or salad dressing.

    Was having a wee look on web for you, and there are some recipes for freezing coleslaw, but not potato salad which apparently goes all slushy and gritty. Mayonnaise should not be frozen, so think that you may have to bin the lot, unless someone else has other ideas. Personally, would never freeze them.
    For your party at New Year, would suggest you make fresh, really simple, cheaper and tastes much better than shop bought.

    My freezing guru (i.e. mum) reckons that the freezing process will slightly decay the main ingredients, like the potato and the cabbage. Making them come soft and squidgy, and therefore not really ideal.

    For mayo - and I designed and built a machine to make the stuff so I whereof wot I speak - it has to be of a special mix to be freezable and even then it doesn't compare well with fresh made.

    Since mayo appears in both your items... sorry but it might be edible... maybe.

  • my mum in law froze it once and it was disgusting! veggies were soggy, and the creamy bit sepatated.. yuk. that was shop bought tho

    Well I think your best bet is to take it out and bin it unless you want your guests to go home thinking what a rotten cook you are,or worse still feel extremely unwell the next day.
    To get around the problem why not ask your boyfriends Mum to make some more,tell her that as it was so good you couldn't possibly make any as good as hers, and she will love you forever.
    and better still get the recipe and share it with us all. I used to know someone years ago that could make potato salad and coleslaw to die for, and when ever we had a party she would be top of my guest list and she would always bring two big bowls of the stuff. But she would never share the recipe with anyone else as she said it had been given to her by her Polish Grandma and was a family secret.
    Getting your boyfriends Mum to like you is a good idea too as she may one day be your Ma-in-law.

  • Yep, sorry, but foods containing mayonnaise are among the few which can't be successfully frozen. The oil in the mayonnaise will separate on defrosting.
    In my experience, you can freeze and defrost most foods, but NOT those containing mayo, salad leaves or beansprouts.
