Using banana as a raising agent

Hi guys

I've finally gotten my w/ends back, and I'm trying my hand at some baking again - previous efforts have been akin to projectiles ;)

Anyways, having completely forgotten to buy yeast / baking powder yesterday, I recalled my mom saying you could make unleavened bread (too long a rising time though) or use banana as a raising agent but she doesnt have any recipes to hand.

Anyone ever tried this ? I've tried googling for it, but nothing coming up :confused:

    Nope, me neither, not with both missing. - but you could try just using SR flour...?

    erm, did I mention Im out of that as well :) Only have Rye flour and wholewheat flour... Ah well, banana fritters it is then :D

    Soda bread? If you have some bicarbonate of soda. Of course you do, you're here, aren't you!

    Otherwise, crackers, biscuits, flapjacks, brownies ...

    Never used them as a substitute for yeast in bread. But I have used bananas in the past for making cakes when I have run out of eggs (wartime recipe), and they came out ok. Perhaps it would make the bread sweet?

    hehe, I know :D The fritters were suprisingly yummy, but I had to mix the batter for a good long while
