Moo2moo throws down the gauntlet

Options
In 4 days time we depart for a long weekends camping in a field. No running water. No loos no nothing. Its also a field in the middle of nowhere so the nearest shop is 15 miles + away, extortionately expensive and unlikely to be open sundays or bank hol. monday. So the challenge as it stands is to feed 4 adults and 2 children for 4 days without a fridge. To further complicate things :

one diabetic (restricted carbohydrate and sugar intake)
one vegetarian
one slimming world devotee
one lactose intollerent

What the heck am I going to feed them?

    we take a cool box (loads of those frozen ice blocks, if you keep it in the shade and only open it a couple of times it will keep fresh stuff cold for 2 days, the next 2 days we would just eat tinned food, packet mash, those packs of pasta in sauce. We take long life/soya milk for coffee and breakfast.

    We are camping this weekend to, but only me, oh, ds 6 and one of our great danes.

    Do you really mean no running water? How will you manage loo's etc? We use low facility campsites but with water and a chemical disposal point so we can use the portaloo.

    Forget food, you'll need to take a huge amount of water just to make do for six of you for four days!

    Can't help too much, we have a gas powered fridge. The usual approach would be to take frozen food, so casseroles, spag bol, chilli etc. They will keep your coolbox cold and you just need to take food out to enable it to defrost. Then add rice/pasta/potatoes as necessary. Also take frozen cartons of juice/milk to keep the temperature down.

    Without water, I'd also take a good stock of anti-bac hand gel, anti-bac wipes etc.

    Wasn't joking aobut the water. Will be taking bottled for eating and drinking and boiling mountian water for everything else.

    The diabetic has problems with rice so thats a no go and the sauce in the packet pasta mixes tends to contain milk so thats out for the lactose intollerent.

    Its laughable really I can cope with 6 weeks of absolute nothingness in a 3rd world country but in the UK I'm completely stumped.

    Some supermarkets do a tinned pasta with tomato sauce etc, some tins of that should be able to make everyone one meal, it would be ok for slimming world too depending on whether it`s a green day or not.

    Tinned veggie curry for another day with rice for 3 and naan bread for the one who can`t eat rice maybe.

    I`d go down the supermarket and see what tinned goods are available, i`ll bet you find it`s easier than you would imagine.

    How about the tins of reduced salt/sugar baked beans? I think that would suit everyone? If you are taking a cool box, you could pack ready-made stuff like pasta/couscous salads etc maybe?

    If I drive out to do things like this, then I just live on tinned stuff - tinned potatoes, tinned steak, soup, veg etc. Everyting tastes good out of doors :)

    Don't forget the tin opener. I still have a scar on my hand where I tried to open a tin of peas with a penknife on a camping trip :)

  • I am in the same position as you as i my diabetic daughter is also lactose intolerant. I would take unsweetened soya milk as that can be used for porridge and drinks.
    I would also use plenty of dry goods pre baked and packed in airtight containers..if you are near a supermarket, cooked chickens can help and a very quick meal put with new potatoes and veg, if you have a steamer all the better.
    One of my friends swears by pre making a curry, if allergies to rice, then put with potatoes or veg..equally as nice.
    Dry instant mash good for a quick meal, as well as the tinned stewing steak..needs must and you can bulk up with veg.
    fresh fruit are ok for diabetics if limited to a certain amount and i always find my DD's blood sugars are under control if she excercises regularly, so plenty of trips out for water!
    Omlettes. wholegrain bread for sandwiches, salads..
    I also bake a few carb snacks for low blood sugar moments so no harm in having those in..just reduce sugar in baking, we don't notice the difference.

    I just remembered we do a mixed bean curry, which uses low sugar beans and mix it with toms, curry powder and any other tins of mixed beans..cook well and very filling and can be served with veg or rice.

  • you're mad! That's going to be really tough with so many different requirements.

    My advice: mobile phone + takeaway menu = everybody's happy!

  • How about quinoa instead of rice? much less carbs re the diabetic.

    with a sauce made for jars, tins - you could even get a tin of onion if you really had to! tinned tomatoes, olives, roasted pepper, sundried tomatoes, dried herbs etc

    jacket potatoes can be varied in size and toppings can be varied. my lazy meal at home is a sweet jacket with one of those individual cans of WW tuna mixes, not sure if all would be lactose free, the mango chutney or 1000 island dressing may be. baked beans, pack of grated cheese, or just serve with salad?

    lunch should hopefully be a little easier as sandwich fillings can be adapted/varied. or something like an antipasti (cured ham/salami, cheese, olives, avocado, sundried toms) or ploughmans platter (cheese - low fat/light feta and soya cheese in the mix?, pickle/chutney, pickled onions, ghekins etc) with some bread. they people can take what they want/can have. i'm sure the cheese would be ok for a day without a fridge.

    as for breakfast - omlette? saves the worry on types of milk and fillings can be varied according to diet.

    if its only a long weekend apart from milk and meat most things would survive for a couple of days without a fridge wouldn't they?

    How about taking a couple of meals that suit everyone frozen in the cool box? That will help keep other stuff cool and defrost as you go along ready for eating. We did this a few years ago on a sailing trip and it worked for the first three days. After all, it doesn't look like it's going to be very hot!!!!!
