Lemon help required!

Options
I was in Sainsburys and had a strange compulsion. My hand hovered over a bag of seven lemons, but I didnt buy them. I only bought one, (16p) but what can I do with it? I havent got a chicken in so cant do lemon chicken.
I've never bought a lemon before!

I've bought some impulse buys in my time - but a lemon? It could have been worse I suppose, but I cant waste it now so does anyone have any ideas?

    Lemon sponge cake. Or a victoria sponge with a lemon icing. I have a recipe for Rock cakes that has the grated zest of either an orange or lemon.

    There's a recipe for lemon curd in our Recipe Collection which is very easy and very yummy and will use up two for you, and there's a link to a very nice slow cooker lemon sponge in a recent thread (I'll see if I can find it and edit back in here, so watch this space) and there's a microwave sponge that can be made with lemon in the Recipe Collection too.

    Then in the Cooking section of the MEGA Index there's a recipe for lemon meringue pie listed under "sweets"...

    ..and I'm pretty sure there was a fairly recent thread all about using up lemons so I'll see if I can find that one too :)

    I always buy lemons (slight addiction to G&T!!!). Seriously though, they are good with new potatoes and onions roasted. Good with one pot chicken and pots as well. Not to mention puds and cakes.

  • Maybe I should have bought a bag of lemons after all.

    I really like all these suggestions, I think I will try popping some lemon in with my roasties tomorrow, and then I can't decide whether to go for a crockpot lemon pudding, or a victoria sponge with lemon filling to use up the other half, :rolleyes: (saving a slice for something alcoholic :D ) Will get more lemons next week if all goes well. I fancy using lemons to clean with too as they smell so nice, Im sure Ive seen Kim and Aggie do marvellous things with lemons.

    Have just remembered, will be using the slow cooker for my beef, so may have to do the Victoria sponge and save the slowcooker recipe for another time. Or - buy another slow cooker so I can join the same club as Ticklemouse. :p
  • Make some pancakes-they are quick and cheap-add some sugar or honey as well as the lemon. Yum!

    I made that crckpot lemon sponge yesterday and got lots of lemon syrup with just a tiny amount of sponge on top.

    I think the quantities given for the sugar and flour are the wrong way round.

  • If you end up with too many lemons, or even half a lemon you can't bear to chuck:

    slice and open freeze. than put in a bag and keep in freezer. Perfect for drinks instead of ice cubes.
