  • I would try and use some type of rack so that the veg aren't touching the draw/ shelve. if air can flow around them it should stopp them getting too soggy

Ah the veg basket, that brought back memories of my mums veg basket a three tier, red contraption that used to be full always of paper bags and veggies.:rotfl: I think veggies are best kept out of the fridge to be honest and I use the pantry as it is dark and cool and they last much longer.

If you intend to use them within two to three months, I would clean and prepare them as if you were going to use them, then bag them in a plastic bag or bags and freeze them.

Just take out as much as you need when you go to use them.

We have been doing that for a few years now with no ill effect.
I used to be indecisive but now I am not sure.

    Hi Heidi,

Carrots usually last well in the fridge for at least a week although I think they keep better if they're removed from the bag.

If I want to freeze them I blanch them first (put them into boiling water for a minute or two, then plunged into cold water to cool them quickly) but others say it's fine to just chop and freeze. This thread might help:

And you might get some ideas for using them on this thread:

    oodles of carrots (merged)

Another question, if they've been frozen raw and I then cook a meal, including the carrots, I assume the whole meal can be frozen, it won't affect the carrots being re-frozen?

No it won't affect the carrots if you use them in a meal you are going to freeze... they'll be fine.

Just thought I'd update - I got the Lakeland stay fresh bags http://www.lakeland.co.uk/stayfresh-longer-bags/F/keyword/stay+fresh/product/1932_1094_1092 when they were a freebie ( http://forums.moneysavingexpert.com/showthread.html?t=1411229&highlight=lakeland ) and not only is my veg draw now completely dry , but my veg have kept fresh for over a month instead of just days! :D

I have similar probs in the fact that my veg drawer is at the bottom and the top of it is made up of a glass shelf. Condensation constantly collects on the underside of this glass and each time the drawer is moved water drips off and onto the veg etc. I always line with kitchen roll but I might invest in some stay fresh bags instead.
