QUICKSILVER!
This is an amazing program. it's basic feature is to be a search/program launcher, but it's so much more! It has currently gone into open source, I think the current build is b56 or b5x. It's a free download and I highly recommend it.

Firefox, Thunderbird, Handbrake, iSquint, VLC, Flip4Mac, Fuzzy Clock
My favourite paid programs:
iLife, iWork, Little Snitch, Pixelmator, Pzizz, Parallels Desktop, 1Password, XSlimmer, Mac Pilot.
Also, there are very few programs that can be run on Windows that there isn't a mac version/alternative for. Because of this, you should not run Windows on your mac unless you absolutely, 100%, HAVE to do so. If this is your unfortunate position, then again, unless performance is essential, I'd recommend not using bootcamp and using one of the virtual machine programs instead. The two main ones are VMWare and Parallels Desktop. These let you run Windows at the same time as Mac OSX. Why is this better?
1 - It's easier to share files both ways.
On Windows in boot camp you can't read from the mac partition as it's not in a Windows recognisable format
2 - It saves you space
The virtual machines don't partition your hard disk, so the space taken up on your hard drive is only as much space as you need. On bootcamp you partition your drive, meaning a fixed amount is taken up by windows and can't be (efficiently) used by the mac part.
