Cooking sausages

My preferred method of cooking is in a frying pan simmering in beer or wine - keeps them lovely and moist.0

Frying pan with onions - pr!ck them several times to let them drain - you need the fat in the pan to stop them sticking to the pan - when nearly cooked I drain them and slosh a LARGE glass of red wine in and let it reduce with the sausages for at least 5 mins...
Sausages NEED some fat in them - even lean sausages will have fat in them. I spoke to my butchers about making less fatty ones for me and he'll have a go because I do love his sausages! But if I want to pan fry them I will have to add oil to the pan to stop them sticking... hmmmmDFW Nerd #025DFW no more! Officially debt free 2017 - now joining the MFW's!

I read on here about boiling the sausages in a pan of water for about 10 mins, then finishing off in a frying pan.
Fat still comes out, but at least I'm happier that the sausages are fully cooked.
When I worked in a restaurant (early 70's) we always did this before putting the sausages under those gigantic grills - I just got out of the habit of doing it when my kids came along.
Stephen Leak - I kept looking at your posting and wondering what was so special about it. Stared at it a few times but took ages for the penny to drop :rotfl: :rotfl: :rotfl: .0 -
I boil my sausages mostly, OH won't eat them like that unless they're in a casserole type dish.He likes them fried, but if I'm cooking he has them grilled

what sort of temp and how long do you oven them for with the rack underneath?
i have always grilled mine, but they are so much work - standing and turning - and i have 4 packets of the morrisons 50p ones to use up and am dreading the grillpan!Ok, ok, i need to go back onto Weightwatchers, lost 7 stone..... 2 back on, this has to change.....Help!!!:eek:0 -
I know this sounds very unhealthy but I cook mine in the oven in a roasting pan, and when they are nearly done I put sliced onion all around them, when the sausages/onions are browned I remove the sausages from the pan, take out some of the fat then put the tin on the top of the oven, add gravy browning and make onion gravy using the fat left over in the pan, not very slimming, but very yummy.look after the pennies and the pounds look after themselves.0

thats a good idea, where did you get the wire mesh from,0 -
I fry mine in one of those ribbed frying pans so they fat stays in the grooves away from the sausages.Accept your past without regret, handle your present with confidence and face your future without fear0
