  • Morning properly everyone

Thank you greenbynature I was beginning to think I was being stupid (probably am but that is another story :rotfl:) Gutted though because I am really jealous of all the wonderful smilies (goes into a corner to sob).

Hopeful1 I am so sorry hun there is nothing we can say to help you feel better but just know that we are all here for you and that we care. All I can give you is a dodgy hug but it is sent with my love:grouphug::lovethoug.

I have paid £11.83 to Mint today my next mission is to check back and get my signature right because I know I have paid a lot more than it says. Well done Jo on the egg you are in sight of the winning line now. My HSBC card is showing zero on line now so just waiting for the statement and I will either have a nice offer from them or more likely shutting it down:D

    16 Payments yesterday totalling £122.96.

    Still not heard from AQA:confused:

  • Hi all
Hopeful1 I'm sorry to hear your news - hope you're doing OK. You know where we are if you need to chat.

The figures are looking very good everyone - well done. I'm off into town later to put my coins in the machine - I think there's about £7 but I need to leave a little of that in my a/c to make sure I don't go overdrawn when my minimum payment comes out later this week (ha! I scoff at my minimum payment - well I don't as its still helping bring it all down but I look down on it from a height and sniff).

  • I know this isn't strictly the right place but here is my pizza recipe for all of those trying to cut down on the takeaways but still have a treat. Hope no one minds me putting it on here.

8oz/225g strong plain/bread flour (may need another 25g/1oz if too sticky)
    2.5ml/1/2 tsp salt
    2.5ml/1/2 tsp sugar
5ml/1 tsp fast action dried yeast (1 packet)
    150ml/1/4 pint warm water
    15ml/1tbsp olive oil

Sift flour and salt into bowl and add yeast. Using dough hook if available and the mixer on slowest setting, slowly pour in water and oil. Move up one setting and ‘knead’ for 3-5 mins until smooth and elastic. Or use a food processor. Or mix together and knead by hand.

Put in a bowl and cover with a cloth or clingfilm and leave in a warm place for c1 hour. Longer doesn’t matter but if less the dough won’t be so springy. When ready to use, knock the air out of the dough and cut into halves or as required.

Roll out on a floured surface into two baking sheet sized pizzas, or more smaller sizes. You can freeze it at this point and then just spread the toppings on the frozen dough and cook directly from frozen - they may take a minute or two longer.

Cover with tomato (pasta) sauce and toppings, cover with a layer of grated cheese and a drizzle of olive oil. Cook in preheated oven at 220 C/425 F/Gas Mark 7 for 5-7 minutes or until the cheese is melted and the base is crisp around the edges.

Note: The cooking times/temps are what works in my oven, yours may be hotter or cooler so the first time its wise to keep checking and note what works for you. For some reason the second pizza always cooks quicker than the first.
