Right, should be ready for about 8pm, just in time to get to the pub.
The bit that bothers me most is this: "The mixture should be sloppy, with no trace of flour."
So, what's stopping all the fruit just sinking to the bottom? In all the cakes I've made with fruit, the mixture's been fairly stiff so the fruit stays evenly distributed throughout the cake. I just know this lot's headed straight for the bottom of the tin.
I've also got a horrible feeling it's going to stick to the tin. I used the spray-on stuff to line the tin, poured the mixture in, then gave it a quick stir to mix the fruit up. In doing so, I've scraped the bottom of the tin, so I reckon I've messed up the non-stickness.

Well, this was the "sloppy" mixture:
This is the cake, which smells fabulous! It's a great recipe! I know it looks a bit burnt because I got a bit distractedbut it's not as dark as it looks in the picture and it's all right, honest.
And this is conclusive proof that all the fruit has sunk to the bottom. :rotfl:
So, how would I prevent that in future, if the mixture's meant to be sloppy?

If you coat the fruit in flour before adding it to the mix it can help it to stop sinking. The mix does look very sloppy...what recipe did you use? The cake looks lovely though! :drool:

Don't believe everything in a recipe, and especially if it's by Anthony Worrall-Thompson.
