Stem ginger cake?

Options
:hello:

I was in ASDA earlier today, and I saw a rather tasty-looking stem ginger cake. It's my mum's birthday on the 8th, and I thought "she'd like that....I could post it to her". I was just about to put it in the trolley, when I realised what I was doing!

So, has anyone got a recipe for a postable stem ginger cake? I remembered to buy stem ginger (in syrup, in a jar), which incidentally, was about the same price as the cake.

Obviously, I'd have to make it tomorrow and post it on Thursday.

Cheers!
MBE
If you lend someone a tenner and never see them again, it was probably worth it.

  • Hey MrBE,

    Is this gonna be a cook-along thread??? :T :j

I found this link to a Nigel Slater recipe. I haven't made this particular one, but his cake recipes generally are spot on: http://www.guardian.co.uk/lifeandstyle/2003/nov/23/foodanddrink.shopping

    Hope that helps?

It'll be a fast cook-along thread, if you keep up. :D I haven't got long!

That recipe looks to be just what I'm after, but...

I've got no dark muscavado sugar. At short notice, I can rustle up Demerara cane sugar. Will that do?

Can I use me loaf tin, coz that's what I've got?

I think both of those would be fine - so long as your loaf tin is big enough. If not you could always pop the rest in another tin or tray if needed and eat that yourself!

It's a 2lb loaf tin, and normally big enough for cake. :D

Back later when the pub kicks out.

Probably too late for the person who asked, but if anyone else is interested, Delia Smith has a wonderful recipe for stem ginger cake with lemon icing. I'm hopeless with computers, so haven't got a clue how to copy recipe, but you can 'google' it.
  • so how did you get on?:confused:

...and if you're now posting cakes - where's mine?
Tomorrow is a new day with no mistakes in it yet...

I'm just about to start! I had to pop and see Mr Sainsbury on the way home to get Muscovado sugar.

As for yours, well you'll just have to put your order in and wait. It'll be a while, coz I'm off to France in a fortnight ;) but you never know, you might just get lucky!

Hope the new littlest pepperpot is fine and dandy? :D

  • Can't you post a cake from France then?

Surely you won't have anything better to do :D

Cheers Julie....not quite too late, but I haven't got the stuff for lemon icing, and a plain cake fares better in the post, so I'll have a look at this next time. ;):D

Welcome to MSE by the way......
