Stem ginger cake?

I was in ASDA earlier today, and I saw a rather tasty-looking stem ginger cake. It's my mum's birthday on the 8th, and I thought "she'd like that....I could post it to her". I was just about to put it in the trolley, when I realised what I was doing! :eek:
So, has anyone got a recipe for a postable stem ginger cake? I remembered to buy stem ginger (in syrup, in a jar), which incidentally, was about the same price as the cake. :doh:
Obviously, I'd have to make it tomorrow and post it on Thursday.

I found this link to a Nigel Slater recipe. I haven't made this particular one, but his cake recipes generally are spot on: http://www.guardian.co.uk/lifeandstyle/2003/nov/23/foodanddrink.shopping

That recipe looks to be just what I'm after, but...
I've got no dark muscavado sugar. At short notice, I can rustle up Demerara cane sugar. Will that do?

I think both of those would be fine - so long as your loaf tin is big enough. If not you could always pop the rest in another tin or tray if needed and eat that yourself!0 -

It's a 2lb loaf tin, and normally big enough for cake.

Probably too late for the person who asked, but if anyone else is interested, Delia Smith has a wonderful recipe for stem ginger cake with lemon icing. I'm hopeless with computers, so haven't got a clue how to copy recipe, but you can 'google' it.0

I'm just about to start! I had to pop and see Mr Sainsbury on the way home to get Muscovado sugar. :rolleyes:
