My email folders now have little "plus"s in boxes, giving me drop down lists of emails from a similar source/with a similar title.

Or something

I haven't asked/told it to - why has it done this, how has it done this, can I change it back?

At the top, click View, then Current View, and click Group Messages By Conversation, to uncheck it.

Tell me how it goes.. That seems the most obvious solution..
