I want to get married in Italy on a budget

The title pretty much says it all. I want to get married abroad (extended family situation is complicated, so I'd rather do without the fuss of a weddinng in England), and I really fancy Italy. I've been looking at the resort of Sorrento in the neapolitan riviera.
I'm looking at about £500 - £800 per person for 2 weeks half board at the end of May, which is fine. But then the major tour operators (Thomas Cook, Thomson, etc) that I've looked at charge £600 - £800 on top of that for the actual wedding organising, even though it is very basic. I feel kind of annoyed at paying the extra when we'll already being paying quite a lot for the cost of the "holiday". But having said that, I really do want one of those packages where they organise it all for you (as otherwise I'd panic constantly
).
So does anyone have any ideas of how to find the packages cheaper?
Also I have considered getting married in Rome, but none of the major operators seem to do wedding packages there. So if anyone knows about any wedding packages for Rome I'll owe them a drink at the Arms :beer: .
I know I could probably do it cheaper independantly and for a normal holiday I'd consider it, but as this is going to be my wedding I want it as hassle free as possible, so wedding packages only please!

How fantastic to get married in Italy!!! We are planning on honeymooning in Italy so I have stumbled on the following:
