Please help me with holiday searching?

I am in such a kerfuddle with searching for a bargainous holiday in late September/early October, flexible destinations e.g. Spain, Balearics, Greece as long as resort is fairly classy and not tacky - we like authentic food, architecture, a bit of history etc. Any board basis, child friendly, we are a youngish couple with a 3 year old and a baby. Beach nearby, and would prefer 4 star as the reviews of most of the 3 star hotels on tripadvisor are scaring me. Departing a Scottish airport, for 2 weeks and all for 1k or less.
I'm not being cheeky and asking anyone to search for me, but can anyone tell me if this is possible given the budget? I'm not averse to 3 star at all but it's hard to find one that is basic but quaint with good facilities.
Also, can anyone recommend good bargainous holiday brokers/sites?

have you tried looking for flight and accomadation i am going to costa del sol soon got a very good price from easyjet and a lovely apartment from holiday lettings worth a look0
