What veg do you have with meals ??

Just about to cook tonight and doing cauliflower cheese with bacon and onion topping, with carrots and baked potatoes but I'd use anything I had. (I actually have gammon steaks but noone is hungry except me so I'll use the blender to chop some bacon and fry it with the onions. I may throw in some garlic too).
I often do ratatoille (courgettes, onion, tinned tomatoes) and serve with chicken and either rice or baked or sauteed potatoes.
I also like corn on the cob with most things. It's delicious baked in its leaves in the microwave and peeled afterwards.
For other meals I chop and mix in veg, eg carrots with mince, etc. I also throw lots of stuff on home made pizzas, e.g. onion or red onion, mushrooms, green peppers.. again it depends what I have.
And two of us like baked sweet potatoes with lots of meals. Other days we have salad and I throw in whatever I have (lettuce, tomatoes, spring or red onions, sweetcorn, grated carrots, cucumber, celery etc)
These sorts of meals are great towards the end of the week for using up veg.somewhere between Heaven and Woolworth's0 -

Whatever is ready for picking of the plots at the moment. TOnight picked mange tout, runner beans, fine beans, spinach, swiss chard and made a warm beetroot salad using a few beets that were ready, and lolla rossa lettuce and prickly little cucumbers. That sounds like a lot, but I am a greedy cow! This accompanied a veggie quiche, which I am slightly ashamed of (read my new thread lol). In summer dont buy veg at all at the supermarket, and hoping to freeze our glut for winter this year.:D0

me, my oh and kids are all pretty good with veg. with a roast we tend to have swede and carrot mashed, runner beans, pea`s, and cabbage. with fish in breadcrumbs and fishcakes it has to be mushy pea`s. with chicken drums and wedges/rice its corn coblets and salad. with chicken casserole/supreme its mini corn, sugar snaps and carrot sticks. we also like roasted carrots ,swede, parsnips and sweet pots chopped in chunks drizzled in olive oil and spinkled with peprika, basil, oregarno and a bit on sugar. pizza has salad or corn. side salad with all sandwiches. xOne day I will live in a cabin in the woods0
