How to save Endowment payouts

Hi,
This is my first thread so please bear with me.
I have the first of my Mortgage Endowment policies maturing this December (approx £20k) and I want to place it into a savings account, high interest if poss, that I can add to as and when I want to, as well as place the money from other policies as they mature in turn.
The objective is to deal with the shortfall in my mortgage and I don't mind instant access or up to 60 days notice in order to get at my money.
Can anyone point me towards a suitable account or is there another form of investment that might work better for me?

Would it be better to use the money to reduce the amount owed on the mortgage now? Usually you will get a better return that way because the interest rate is higher and you pay no tax on loan repayments as you do on savings.Trying to keep it simple...

Thanks EdInvestor, I'll check with my lender how to do this with my interest only mortgage.
I just felt that maybe investing the monies as the policies mature would enable me to manage my shortfall a bit better by adding as and when I can afford to.
