Ex-DH brought son back last night and presented me with a bucket of horseradish!!!! And yes I mean a large bucket
Can I freeze it as there is no way I can get through this much horseradish in one go.?

Organised people are just too lazy to look for things

Hi, Marguerite has two recipes for horseradish.
Pickled horseradish - you can used spiced vinegar or white malt or white wine vinegar, but you must add salt to the vinegar. To each 1/2 pint of vinegar add 1 teaspoon of salt. The mixture doesn't need to be heated but you do need to stir well to make sure the salt has all dissolved. Peel the fresh horseradish roots and finely shredd or grate the flesh. Put into cold sterilized jars and pour over the vinegar. Seal.
You can also make horseradish vinegar. Malt, white wine or distilled vinegar can be used for this. Scrape the outside of the horseradish root and then shred the flesh. Allow two tablespoons of horseradish to each pint of vinegar for a mild taste and double the horseradish for a stronger flavour. Check the flavour after 4 weeks and then strain.
I don't know what I would do with either of these delicacies, but as both seem cheap and easy, they might be worth a try!0 -
I've never cooked with horseradish and wasn't too keen on horseradish sauce the one time I tried it
Anyway, I had a look on google!!
Found https://www.horseradish.org which has lots of recipes including ones for horseradish and vegetable soup in the starters section, so maybe you could freeze it like that. But there are lots of other recipes.0 -
Whatever you do with it watch out when you prepare it, the vapours get in your eyes they are 100 times worse than strong onions!0
