Kids lunches for the holidays?

School holidays start tommorrow, and I was wondering if anyone had any ideas about lunches everyday? During term, I pack my daughter off to school with either a tub of pasta, or a hoummous and cucumber sanbo,, but needless to say she won't touch these in the holidays. We normally end up having beans on toast every day.

I still have proeblems with this, but some ideas are...
HM vegg soup and a HM roll...hav fun baking together, make rolls into faces/animals
Baguettes with various fillings
Microwaved jacket spuds
grated courgette HM muffins with salad
Hope these give you a start. I also get the kids to sit down at the strat of the week with me and we make a menu for the weeks lunches to avoid arguements as the week goes on! if it's written down, it's the law!!

I used to make a big batch of tomato sauce and freeze it in individual tubs so they could have pasta with tomato sauce and cheese-you can always add things like mushrooms or olives to vary it a bit.You could make large batches of soup or chilli too.
Those 8p packets of noodles are good if you use them in a stir fry with a few veg and a handful of cashews.
If you make pizza in a large roasting tin you can cut it into squares and freeze it.
My DDs also used to like toasted sandwiches and tortillas.0 -

Another one to add to the list- lentil & veg bake
It's not an exact recipe as I tend to bung in whatever is to hand but as long as you use enough egg and/or cheese (guess being vegan would require vegan cheese- but not sure how well this melts!) it tends to turn out ok.
Cooked lentils/grains- find broth mix pretty good with pearl barley red/green lentils split peas etc
Chopped peppers
Chopped onion
Any other veg - again chopped- that has been left over in the fridge that needs using up or canned beans/sweetcorn
Seasoning such as a dash of curry powder or mustard, something with a bit of zing (fajita seasoning works ok too!)
Couple of beaten eggs
Grated cheese
Fry the veg, add the seasoning and mix the lot together with the rest of the ingredients. Pour into a baking tray/tin (even a round tin is fine) and pat down, so that the mixture is about 1.5 inches deep. Bake in a medium hot oven for 45 mins or so, until the middle is firm and the top slightly golden. Allow to cool and cut into slices, serve with a fresh salad and some chutneys or pickles. It freezes really well too so in the past I have made lots and bunged it in the freezer for emergency lunches/snacks/picnic fodder.0 -

home-made pizzas (stolen from nigella) - one small plain naan bread, topped with tomato sauce (a home made pasta sauce liquidized and strained a bit is perfect, and you can freeze in cubes for this), then top with whatever you fancy - cooked bacon, onions, mushrooms, salami, topped with cheese of your choice (Aldi's mozarella is 49p a ball and fab), in a very hot oven for about 4 mins - gorgeous, and no pans to wash!
One naan per child, they can enjoy putting on their own toppings too.0 -
