Lentil and tomato soup is a huge favourite of mine
Quinoa is also very quick and delicious with whatever you normally eat
cous cous is also a fav of mine and again quick
And I love roasted veg but that's more of a dinner meal.
Jacket potato's are good and of course any rice dish or sandwiches!!!

COURGETTE TEA BREAD
pre-heat oven to 180c/350f/gas 4
grease a 2lb loaf tin and bottom line with greaseproof paper - make it so it comes up the narrow edges so you can use it to lift it out
or line muffin tins with papers- 1 large egg
- 125ml sunflower oil
- 175g courgettes -trimmed and grated (on large holes)
- 150g wholewheat flour -i used ordinary
- 1/2tsp baking powder
- 1tsp bicarb
- 1tsp ground cinnamon
- 175g soft dark brown sugar
- 75g sultanas
- 3oz walnuts chopped
- tip courgettes and all dry ingredients into a large bowl and mix well
- whisk egg into the oil and pour into dry goods
- mix to a thick batter and pour in tin
- shove in oven for about 1 hr or until a skewer comes out clean..cool in tin for 10 mins before turning out to cool
when cutting you will need a really sharp knife as its lovely n sticky and This will keep in a tin for 1 week.... or can be frozen.
i made 38 mini muffins and they took about 15 mins a batch and if you let them stand for a few seconds in the tin they firm up and are easier to remove

Well, we just have sandwiches or bread and cheese, or soup if it is chilly. Much the same as packed lunches really. I don't see the need to get fancy with everyday lunches.
Or, of course leftovers from the previous night's supper -looks like that for tomorrow as I've made too much bean stew:rolleyes:0 -

We usually have something different to packed lunches, it might just be a sandwich or it might be
beans on toast
scrambled/fried/poached egg on toast
tinned pilchards on toast (usually a toast theme lol)
crumpets
toasted sandwiches
or last nights leftovers depending on what it is.

she's not a vegan anyway, but quite a fussy veggie, though almost all these can be "veganised" anyway
Yes, she does eat all her food at school, at least she always comes home with the sticker to say she has. Just when she's home, she wants us to make something a bit different, and that takes her longer than 5 minutes to finish.
I never normally eat at lunch time, so I'm terribly unimaginative about it!0
