I dont always use eggs to bind the meatballs together. I tend to blitz the mince etc in my food mixer (the kids prefer it) and the texture goes smoother and sticks together anyway.

I never add egg to meatballs (just breadcrumbs, onion, spices and seasoning) and they're lovely. The trick is to not use mince that is too lean. There's an earlier thread with some more suggestions so I've added your thread to it to keep the suggestions together.

I never use egg either - just onion and grated carrot - oh, and sometimes a handful of porrige oats to stretch the mix. The carrot seems to add enough extra moisture to bind everything together and seems to disappear once cooked.
