Does the pud sit fully in the water? Should it be always covered by water?

yes it does sit fully in the water and keep it bubbling the whole time and top the pan with boiling water or else it will go mushy. I use the pan from the pressure cooker for this as it needs to be quite deep. When it's unwrapped, at first the outside looks a bit soggy and pale. leave it to dry for a few mins and then cut into it and see the difference.............

Could you edit that into the recipe intructions please? Just to help save us poor confused souls who only ever do puds like that in the microwave.

Ok, Ok, I blame you lot. I have no will power when it comes to puds. The kids want them, but they are all skinny as rakes and I feel I also have to join them (would be rude not to, surely? :D) Whatever we have for a main course, I think a sponge pud will be on the menu tonight.

Must go and look up what this clootie dumpling is. Never heard of it, but sounds intriguing. :)

I use a 2 egg sponge mix on top of some golden syrup in a bowl. Whack in the microwave... power 600-700 for about 3 1/2 mins I think
