trying to eat more vegetables

OH is hopeless with vegetables - hardly eats any but I'm discovering it's more because he's never really had them, 'weened' him onto carrots, beans and brocilli and he eats lettuce (well the bags of different salad leaves).

I think I need to try and cook some meals with vegetables in them - part of the trouble is if we plan to have veg with a meal he's cooking he'll forget to do the vegetables until he's serving up.

This is probably a stupid thing to ask but I know people on here will have some suggestions, so recipes that include vegetables in them would be good - do have a slower cooker ;)

I know lots of you are fountains of knowledge when it comes to cooking so I thought I'd ask. Also have a 100 extra tesco points when I spend £4 on vegetables in Tescos that I need to use so that's part of my motivation to get some ideas ;)

    I put a bag of frozen veg and a packet of dried peas ( which I have soaked overnight) in the slow cooker in the morning with some boiling water and two organic stock cubes - set on low and the soup is cooked when he gets home.

    If I make this overnight then he is eating soup or curry at 7a.m. (I used to wonder why the level was lower than expected - then caught him eating a curry at breakfast time.)

    The obvious one to me is veggie soup - carrots, onion, potato etc

    You could make pasties, they have veggies in them

    Or a pie, steak and kidney could add muchroom and carrots

    Or a veggie lattice

    Chicken and asparagus go nice together - again pie

    Cauliflower cheese, or even better, leeks in cheese sauce, same idea.

    Bubble and squeak - mashed potatoes and cabbage mixed, seasoned and fried or baked.

    Veg curry, veg stew, ratatouille, Veg pies (chopped veg cooked and mixed with cheese sauce and baked as a pie), cheese and veg pasties (potato,onion, carrot and swede).

    Vegetable soup (lots of fresh herbs or this tie of year a spoonfulof pesto) or leek and potato soup are favourites here- with homemade garlic bread of course!

    If he likes mince, you could try adding chopped mushrooms, courgette and pepper to a bolognaise sauce, or grated or chopped carrots and swede/turnip to shepherd's pie etc.

    Mashed potato is lovely with mashed turnip, chopped spring onions or chives.

    You could try making 'real' mushy peas from dried green peas. Just soak them in cold water overnight, then rinse and simmer until soft. I like them in a mug with vinegar and black pepper but they're just as nice with tatties and whatever else you're having.

    Waitrose have some great recipes - one of my favourites that combines veg and the important Omega oils is Roasted Salmon Pasta - it is dead-easy and fast to make, doesn't cost the earth, and is delicious & healthy.

    You can also easily vary some ingredients - - e.g. tonight, instead of the cheese sauce, I mashed up some left-over cauliflower and broccoli with a bit of skimmed milk, and used Asparagus instead of the green beans. YUMMY YUMMY!! Triple-dose of veg, and nobody even noticed it hehe. I also put a couple of sprigs of Rosemary from the garden between the salmon slices during baking (then discarded them), they add an amazing flavour to the salmon. Instead of dill, you can use chopped parsley, spring onions or chives (if using parsley, go for the flat-leaved one, it's more tasty and nutritious than the curly one)

    I am not a great veg- or fish-eater myself, but I could get addicted to this recipe (mind you, I do love pasta!).

    I'm going to have a really good think and do a careful plan.

    I'm also going to go for the veg section first in tescos - we normally go to that bit last when I feel fed up and just want to go and pay. So I'm going to be better now :D

    the first set came straight from the Cooking section of the MEGA Index. In fact there's a whole section on vegetables in there too which, while not all about hiding them or getting used to them, will certainly give you lots more ideas and options.
