how do you make sweet peppers in olive oil?

On holiday recently we had red, green and yellow pepper in roasted, I think,olive oil, I know you can buy them in jar in the supermarkets but they're very expensive. Bought a bag of peppers today and would like to make them myself, recipe anyone?

  • Just put peppers on baking tray and drizzle with olive oil (extra virgin is best) and put in oven for about 15 -20 minutes.

    I was hoping to be able to preserve the peppers in the oil so I could keep them for some time and use as required.

    I grill them under a hot grill till charred then skin them. Then marinade in a little garlic red wine vinegar and olive oil. They do last a good while (I've never had to throw them out anyway and just used some after about 5 weeks). Try to get the big thick peppers, the value thin ones don't grill the same way.
