Anyone used the Betty Crocker Bisquick mix to make American Pancakes or Scones?

    Hi,

    I used to get through quite a lot of this (grew up in the US) but was just being lazy - it's nicer and probably cheaper to make your own, particularly if your crowd eat as many pancakes as mine do.

    This is the recipe I use for pancakes:

    225g plain flour (about 8oz)
    1 tbsp baking powder
    1 tbsp caster sugar (optional - but lovely if you know you are going to have sweet fillings/toppings)
    pinch of salt
    2 eggs
    250ml milk (about 9fl oz)

    Seive the dry ingredients into a big bowl. Chuck in the eggs and milk and stir
    to make a batter. Don't worry if it's a bit lumpy. Cook pancakes. Enjoy with your fave toppings.

    This is just a basic starting point, I made pancakes this morning and used about 350g flour and just added a bit more milk. If you like your pancakes more American style, mix up a quite thick batter, for more crepey ones just add a bit more milk.

    I usually make way more than we need on a Sunday morning so the kids can heat them up on Monday morning for a quick weekday breakfast.

    This is 41p in Tesco now, it's lovely for American style pancakes with crispy streaky bacon and mmaple syrup.
    A minute at the till, a lifetime on the bill.

    Nothing tastes as good as being slim feels.

    I make these too ;) We have them 2-3 times a week for breakfast. You can leave out the egg for greater economy, there is very little difference.

    I sometimes use yogurt instead of milk in which case I add 2 tsp baking powder +1 tsp bicarb (baking soda).
