3 week Euro holiday for £1000?

Hi,

I'd like to have 3 weeks away somewhere in Europe and spend around £1k for 2 people self-catering. Flying from any London airport, from 28th July through August. It needs to have a beach. Not into night clubs.

So am thinking up to £250 for 2 return flights (prob Ryanair)
then £250 per week accommodation.

Current possibilities:
Croatia
Mallorca
Sardinia

any thoughts on where I might find accomodation for this budget? is it doable?

any other suggestions welcome.
