alabama fudge cake addiction

Ok so I'm a bit addicted to morrisons alabama fudge cake, but at around 90p for one slice I think I need to get a homemade version.

I have trawled through the index and found some chocolate cake rec and a choc fudge type icing, but these won't do it. The alabama fudge cake has cake that is very moist almost sticky, and the topping/filling is not like the type of fudge icing in the rec(I have made the frosting before). The filling rec on here is like an icing type frosting, the morrisons version is more chocolaty and not as sweet and "icing sugar" tasting. It is also thick but not "set" if you see what I mean.

Any ideas on how to get the texture and flavours of my fav cake at home plz :o

    I love this recipe (so do my kids !) from Pink-Winged. Its sooo chocolatey

    "Easy Chocolate Cake

    6 oz self raising flour
    1 and a half level teaspoons of baking powder

    - sift into a bowl

    6 oz soft margarine or butter
    6 oz castor sugar
    2 heaped tablespoons of cocoa powder
    3 eggs
    1 teasp vanilla essence
    3 tablespoons of warm water

    - mix to blend and beat well before adding to flour mix (above)

    Divide the mix between two greased 7 - 8'' tins. Bake at 180 degrees for 20- 25 minutes.


    Chocolate Fudge Icing


    6 oz icing sugar
    2 oz cocoa powder

    -sift into a bowl


    3 oz butter
    4 oz castor sugar
    4 tablespoons of water

    - disolve in a pan and bring just to the boil before adding to the icing sugar and cocoa powder mixture. Stir well to remove any lumps, then pour half onto each sponge cake.

    You need to work quickly with this bit as the icing will begin to set if you don't.

    Put the nicest looking one on top and add loads of flake pieces or whatever decoration you like.

    My DS asked for it for his birthday cake & he chose to decorate it himself - it was covered in jelly beans, marshmallows etc etc. it was lovely though !

    Thanks for that sounds nice always love a good cake rec, but the topping sounds simular to the rec I have as it sets.

    The frosting on the morrisons cake is not set at all and is almost more like a chocolate spread, the cake itself is very moist and sticky rather than a normal chocolate cake. Just not sure what I add to a normal cake mix to get the texture or how I make this type of topping.

    ooo I know that cake! we got one from Asda last night which looked simlar but just was not chocolaty at all! I think i need to have a go at making my own too, we love the alabama fudge one from morrisons

    If the cake is sticky, perhaps they use golden syrup in the mix, like you do in Jamaican ginger cake

    Thanks for those ideas, defo the topping seems more like a ganache than anyting else. Thinking now it is that kind of thing. As for the cake I like the idea of the syrup sounds good, will have to have a play around.

    If I hit the magic formula will let you all know lol.

    Chocolate Fudge Topping

    Hi try this recipe it is lovely

    100g chocolate
    1 tablespoon of margarine
    1 tablespoon of icing sugar
    1 teaspoon of golden syrup

    Put all ingred in a bowl. Melt in the micro for 30 seconds give it a stir and put on for a further 30 seconds. If it is a bit claggy just add in a wee bit more margarine. I usually put this straight onto a cold cake. It tastes really fudgy and should be waht you are looking for. It is also cheap to make

    Thanks for that sounds yummy. Sat here eating a slice of morrisons mmmmmm. Purely for research of course lol.

    Hi I just stumbled on this thread looking for a recipe for alabama fudge cake too, did you have any luck finding the right ingrediants?
    I was thinking this cake might be similar, just leave out the pepper/chille etc though it is nice with. http://www.elise.com/recipes/archives/007254chipotle_flourless_chocolate_cake.php
    As the recipe says there is no flour in it so it's almost fudge like.

    I just can't think what to use for the topping for it to be like the topping on alabama fudge cake, I have a recipe of 1spoon of milk and butter 100g of chocolate and icing sugar (I think) but for it to be similar to the topping it would need to be much thicker, unless I tried with double cream as in ganache?

    Any ideas or suggestions? It's my mums birthday this week so was thinking a cake would be nice

    Try this one-I think it's fom Mary Berry.

    Melt 3oz butter in a saucepan, add 2 oz sieved cocoa and cook on a low heat for one minute stirring all the time. Remove from heat and beat in 8 oz sieved icing sugar and 6 tbs milk. It makes a really rich, soft icing.
