Chili and Spices are absorbed by fat based products, thus drinking milk breaks down the spice in your mouth and gives you relief.

Water, lager and such like only put cold fizzy antagonistic feelings on top of your burny mouth, but don't remove any of the spice.

Thus, milk and yogurt help ease the burn and the favourite lager doesn't do much for it.
