inspire me

what can i make that will use up loads of onions and courgettes, and will almost disguise the courgettes as no one likes them, but will eat them if they dont know they are there.

    Why not peel the courgettes (to get rid of the tell-tale green colour!), then coarsely grate them and mix with finely sliced onion and grated carrots. Mix this all into thick yorkshire pudding batter, and cook tablespoon-sized blobs of this vegetable fritter mix in an oiled frying pan over a gentle heat, turning half way through.

    They cook quickly, and are very filling & tasty.

    Hi mum2many,

    What about a minestrone soup? My kids aren't big courgette fans but once they absorb all the other flavours in the soup there is virtually no taste from the courgettes at all.

    Ooh good idea CJ;)

    I would peel the courgettes in order to disguise them. Then finely chop in a food processor with the onions and bag up in handfuls for the freezer. Use whenever you make a stew/curry/bolognese sauce/tomato sauce. I defrost them in the microwave for 1 min before frying.

    brilliant. got some other veggies going soft so will get them frozen.
    why when i need freezer space does my chest freezer pack in?????:mad:

    now im laughing cause im thinking of that egg advert (if anyone remembers it) and they say "oh what can i make with only......." "courgette fratatas!" lol or something like that - i dunno what they r, if ive even spelt them right lol but ah well - thats my 2p worth *hides*

    Tell me about it:rolleyes: Three weeks ago I had 2 small freezers then one died. I managed to squeeze everything into the working freezer. We ordered a new big freezer to replace both small ones. Comet said it would be 10 days, then they added another 10 days on to that. Freezer was supposed to arrive this Sunday. I'm getting desperate for space now. I was just in the middle of removing all my chicken stock from the tubs it is stored in and placing the blocks in bags in order to free up as much space as possible when the woman from Comet rings and says 27th July:rolleyes: So, we've cancelled and are searching for another big freezer that can be delivered asap -I have 8 chickens waiting for me in the butcher's freezer.

    Sorry -bit of a rant but I feel better now:D

    what a pain.
    all the stuff out of the chest freezer went in the freezer part of my big fridge freezer(american stylee) but that is now full. never realised how much i relied on it.

    I've got a huge American style fridge but there is no freezer compartment -I need all the space for refrigerating food, I don't know how people cope with those little fridges -or maybe we just have way too much food in our house:o
