packing tips please.

I was just wondering if anyone has any packing trips , this is our first real family holiday abroard ( been to the states to visit family, but not really a holiday as it was for other reasons) we will be off to turkey at the beginning of August.

I want to pack as light as possible, but make sure i take what i need for myself and my 2 kids, (Daughter 12 almost 13, and son 5, almost 6 years) we wil be away 14 nights B&B

Does anyone have any tips on what to take, for instance
Clothes wise, how many change of clothes should i take, i know i shoudl not take a change of clothes for every day of the week, but realistically how many changes of clothes for each person.

What should i pack and what shoudl i leave to buy when we get there ( bearing in mind on a tight budget)

How to pack, do i fold or roll clothes, which do you find the best method?

Or can you pass on any packing words of wisdom, anything will be appreciated
