Thank you everyone for the "diet" insights, very much appreciated!
I think many have it right on the head actually. We have far too many convenience foods, fast food/junk food etc. All very tempting and for the most part bad for us, well at least for me anyway.
I must admit that I have been cooking a lot more as of late which is something I very much enjoy. Life is pretty stressful at the moment and it is far too easy to go out for a meal or have a takeaway then it is to take the bit of time to cook, which I actually find relaxing. One of these days I will figure my own self out!! I do feel much healthier and have seen a difference since I have stopped all the low fat, reduced fat, reduced salt etc items. I am now just eating normal food, in moderation, still dont eat much fried as outside of chips really dont care for it anyway and i have cut down the amount of wine etc that I now drink down to one good night at the weekend and maybe the odd single glass a couple times a week. In 3 weeks I have shed 7 lbs (DH says I really should get my pockets fixed so the pounds stop falling out) *shaking head* I dont feel deprived andif I really really want something like today for lunch I positively craved kebab meat and salad, I will have it. I find I now actually eat less, enjoy food more and know that I am not being filled with chemicals etc.
I am not perfect and have a loooooooong way to go, but one tiny baby step at a time I WILL get there. I am doing it the right way and have a much better chance of never gaining it again by changing my lifestyle!
Sorry for the looooong ramble, that is what I get for doing mind numbing database management today and having time to think! Did just go put a beef casserole together for tea tonight, a small amount of meat and loads of veggies, should be lovely with some mash for tea later tonight.

This hits the nail right on the head for me, I love to cook, but I'm getting incrasingly more tired as I finish work, and decide to grab a lot of pizzas, my pharmacy is also in a supermarket, which means its very easy to grab a couple of not so great bits, coz you want to 'treat' yourself after a long days work.

anyone have a recipe for apple cake?
225g plain flour
1/2 tsp baking powder
100g cold butter, cubed
100g sugar + 2 tbsp
1 large egg, beaten
100ml milk
2-3 apples
1 tsp cinnamon
Mix flour and baking powder, rub in the butter with your fingers. (I love this bit - nice and squelchy). Mix in 100g of sugar, the egg, and milk. Put one half into a greased cake tin (I line the bottom with greaseproof paper, otherwise it has a tendency to stick).
Peel, core and chop up the apples into smallish pieces, place on the dough, sprinkle with 1 tbsp sugar and the cinnamon. Cover with the rest of the dough, sprinkle over the remaining sugar.
Bake on 180 C for 40-50 mins.0 -
