Why don't you cook them up into a mushroom stroganoff for yourself and freeze when cooked in single portions. (I assume you froze them raw not cooked? You can only refreeze if you cook them). Then carry on as normal with veggie meals, making 3 portions at a time of anything. Freeze one that can be eaten with rice. On lazy days you can get a mushroom dish out for you and an alternative for him cook some rice and almost ready made microwave meals.

I find using butternut squash or sweet potatoes as an economical alternative to meat. I use these and tins of various types of beans all the time and it works out so much cheaper than meat.

When my children were small, they convinced their cousins ( a year younger than them) that eating mushrooms made your eyeballs bleed :eek: The cousins still won't touch them :rotfl:
