Ideas to use a HUGE cabbage

In my veg box last week I received a ginormous green / white cabbage, which I have been putting off using as I'm low on ideas. I like cabbage as a side dish, steamed with butter and black pepper or stirfried, but neither are going to put much of a dent in such a big cabbage with only me eating it.

Has anyone got any bright ideas on what I can do with my giant brassica, so most of it doesn't end up on the compost heap? (Not coleslaw, though - I like homemade coleslaw, but can't face all that chopping!)

    We make a colcannon type dish with mashed potato, shredded cooked cabbage, bacon and cheese - put in a dish and baked until the cheese melts.

    I was going to suggest coleslaw, although like you I hate all the chopping. Have you got a food processor you can use? It's so quick and easy if you have.

    Or stuffed cabbage leaves. I normally stuff them with a dryish mince and rice mixture.

    I made coleslaw last night, literaly took 2 mins from start to finish, Sliced the cabbage, finely chopped an onion and grated some carrot mixed with mayo salt and pepper.
    The cabbage will last ages, I have one in the fridge that has been on the go for over two weeks.
    I put it in minestrone soup or very finely sliced in a salad for a bit of crunch.
    Stuffed cabbage leaves either using meat or veges in a tomato sauce is lovely,

    I freeze cabbage when I have any left after doing a 'proper' roast dinner.

    I use it mixed with mashed potato as a shepherd's pie topping (you need to squeeze the water out of it) to bulk up my 5 a day.

    Tonight I'm having self-frozen cabbage, cauli & carrot batons with some leftover pork from a previous roast.

    Colcannon sounds fab.

    That's just reminded me that I've some spring onions in the fridge so might do Champ to use them up - and I might just go mad and use up some single cream too.

    Cabbage tagliatelle (from the Rose Elliot cookbook): slice the cabbage up thinly so that it resembles tagliatelle pasta. Boil for about 5-8 mins depending on how all dente you want it. The sauce is usually cream cheese with garlic and the zest of a lemon (1 cabbage serves 4), but we always add bacon too!

    Thanks, everyone. There's some great ideas here, not least freezing cabbage, which I didn't know you could do - slightly frustrating now I think of the number of part-cabbages I've had to throw out when I could have frozen them!

    Now I just need to decide which idea to try first...
